To celebrate Dr. Seuss Day, I wanted to make an extra fancy green eggs and ham by making a green soufflé with ham. I hope you can have a throwback to your childhood and have a tasteful experience that even Sam I am would approve!

- Milk – 240 grams
- All-purpose flour – 33 grams
- Softened butter – 50 grams
- Diced ham – 40 grams
- Cheddar cheese – 65 grams
- Egg Whites – 255 grams
- Green food coloring (to your liking)
- Salt and pepper to taste

Preheat oven to °350F.
- Butter the sides and bottom of 4 (4-ounce) ramekins
- Mix the softened butter and flour
- Heat milk in sauce pan
- Mix milk slowly into your butter and flour paste, move back to sauce pan and let boil. Your base mix is finished, set aside 160 grams.
- Stir your ham, cheese, food coloring in your base mix.
- Whip egg whites until they form a stiff peak, then add to the mix and fold in until just combined.
- Fill and level off your ramekins.
- Bake for 20-25 mins
Serve fast before they deflate and enjoy!!
