This is our couscous salad recipe. It’s a unique dish featuring a few vegetables, good flavor, and a slight crunch. Fish is a great option to pair with this side dish. It will contain a moderate amount of protein and fiber. If you want an extra fiber boost you can make it with wheat couscous. Couscous has a few parts of vitamin B, (Selenium, Niacin/Vitamin B3, Manganese, Phosphorus, Folate, Vitamin B5.) This is a healthy dish you will be happy to eat.

- Butter 2 Tbsp
- Water or broth 1 and 1/2 cup
- Couscous 1 cup
- Carrots shredded 2 Ounces
- Onion small diced 1.5 Ounces
- Red bell peppers small diced 1.5 ounces
- Garlic minced 1 Tsp
- Salt 1 teaspoon
- Pepper to taste
- Olive oil 2 Tbsp
- Parsley 2 Tbsp
- Lemon juice 1 Tbsp

- Boil water and add salt
- Heat butter in a small pan. Add couscous to the pan with butter and cook for 2-3 minutes or until slightly browned.
- Add couscous to water and simmer for 8-10 minutes, covered.
- In the same small pan add oil, carrots, onions, peppers, and garlic, and cook for 7 mins.
- Fluff cooked couscous with a fork and put it in a big bowl and mix it well with the vegetables, parsley, and lemon juice.
- Let it cool before serving.
