Cake

  • Lemon zest 2
  • Fresh lemon juice 30 grams
  • Butter 1/4 cup
  • Honey 90 grams
  • Greek yogurt 1/4 cup/70 grams
  • Eggs 2 eggs
  • Baking powder 1 1/2 teaspoons
  • Buttermilk 1/2 cup
  • Sugar 90 grams
  • Cake flour 210 grams
  1. Start by mixing butter, honey, Greek yogurt, and buttermilk for 1-2 minutes.
  2. Mix in eggs, lemon zest, and lemon juice for another minute.
  3. Fold in the baking powder, sugar, and cake flour until just combined.
  4. Pour into a greased 9-inch circular pan then cook for 20-25 minutes.
  5. Let cool before frosting your cake.

Frosting

  • Butter room temperature 1/2 cup
  • Powdered sugar 410 grams
  • Vanilla 2 teaspoons
  • Butter Milk 2 tablespoons
  • Salt 1/8 teaspoon
  1. Beat butter for a few minutes in a medium-sized bowl.
  2. Slowly mix in the powdered sugar about 100 grams at a time until well combined.
  3. Mix in vanilla and salt then stir in before adding buttermilk.
  4. Spread evenly over cake.
