This is our colcannon recipe. Colcannon is a perfect side to have on St. Patrick’s Day. It’s a unique way to change up your normal mashed potatoes. Adding cabbage will add a nice texture and provide a good source of vitamin K, potassium, and fiber. This is a simple and affordable side dish.

You will love this iconic Irish dish. The history of colcannon began around 1735 and developed into an important food used to celebrate Halloween. People made it to bring good luck, and some single women used it to try to find a husband. When it was made back then it was basically a one-pot dish boiling the cabbage, potatoes, and even parsnips were in these traditional colcannon. After they finished cooking it they could put a gold item in. Depending on what it was there was a meaning behind the object. If it were a coin they meant wealth or prosperity for the next year. If you found a ring it meant you might get married soon. It’s served by some Irish-Americans for St. Patrick’s Day. In the United States, we like to bring in this lucky food on Saint Patrick’s Day.   • About 2.5 lbs of potatoes
  • About 7 ounces/one small head of thinly sliced cabbage
  • 1 cup Milk
  • 7 tablespoons Butter
  • 1 ounce of Green onion
  • Salt
  • Pepper
  1. Scrub, peel, and cut potatoes into a large dice then boil until fork-tender.
  2. Heat milk and 5 ounces of butter a little under scalding.
  3. Drain potatoes and mash with your milk and butter.
  4. In a separate pan, add the rest of the butter then cook the cabbage for 7 to 8 minutes, seasoning with salt and pepper.
  5. Add your green onions, then cook for 1-2 minutes.
  6. Add the cabbage mix to the potatoes mix until well combined.
  7. Serve with a main course of any food you would like.
