Tomato Basil Soup

A well-balanced tomato soup with fresh basil and seasonings.

Ingredients
  

  • Canned tomatoes: 56 ounces
  • Chicken stock: 2 cups
  • Milk 2 cup
  • Onion 3.5 ounces
  • Garlic 4 cloves
  • Olive oil: 2 Tbsp
  • Salt 1 tsp
  • Pepper 1 1/2 tsp
  • Sugar 1 Tsp
  • Basil 1 ounce

Method
 

  1. Heat olive oil and cook onions until translucent, then add garlic and stir for about a minute or two.
  2. Pour in the tomatoes, then heat until boiling. Simmer for 15 minutes.
  3. Add basil, salt, pepper, and sugar, then use an immersion blender and blend until smooth.
  4. Add chicken stock then heat before simmering for another 10 mins.
  5. Add milk and heat until it simmers.

*If you are sensitive to acidic tomatoes, you can add more milk.
