This is our Tonkatsu recipe, it’s a deep-fried breaded pork that pairs nicely with rice. We made our own sauce for this recipe, but we also have a store-bought brand that we recommend if you prefer not to make your own sauce, it’s a Bull-Dog brand that makes their own Tonkatsu sauce. You can buy it on Amazon if you can’t find it at your local grocery stores.

Here is some fun history about Tonkatsu. In 1899 the restaurant Rengatei in Ginza, Tokyo first made and developed this food that is still made today in that same restaurant. They have 127 years of experience making this and they like to pair this dish with cabbage. This is a very fun recipe to make and it tastes amazing. Tonkastu

  • Pork roast about 3 lbs
  • Salt (About 1 tsp per slice)
  • Pepper (About 1 tsp per slice)
  • Vegetable oil 1 gallon
  • Flour 1 and 1/2 cups
  • Eggs 7
  • Panko bread crumbs 8 ounces
  • Garlic powder about 1 tsp per slice
  • Onion powder about 1 tsp per slice
  1. Cut the pork into 1-inch slices and use a mallet to flatten it to 1/2 inch slices. Sprinkle the salt and pepper on both sides, let it sit in the fridge for about 8 hours.
  2. Heat oil until it reaches 350ยฐ (Don’t exceed 370ยฐ)
  3. Sprinkle the onion and garlic powder on both sides of the pork after the 8 hours in the fridge.
  4. Set a 3-bowl system with eggs, flour, and panko in each bowl.
  5. Dredge your pork slices with flour, then eggs, and lastly panko. Let them sit for 5 minutes.
  6. Fry each separately for 2 minutes, then let them rest for a few minutes. Fry again until it floats a little and is golden brown. (The pork should be ยฐ150 to be safe to eat)
  7. Shake oil off food and rest for a minute before cutting, then serve with rice or any other side you would like to pair it with.

Sauce

  • Ketchup 3/4 cup
  • Worcestershire sauce 1/4 cup
  • Soy sauce 1/4 cup
  • Mirin 1/3 cup
  • Brown sugar 2 1/2 Tbsp
  • Onion powder 1 tsp
  • Garlic powder 1 tsp
  1. Combine all ingredients in a sauce pan.
  2. Heat until it simmers, keep simmering for 15 mins max.
  3. Let cool before serving.

*Press panko in the pork to more effectively stick.

*Candy thermometers will help you maintain the oil temperature.

*Use tongs to safely move the pork around.

*Use a meat thermometer to check the temperature of the pork after taking it out of the oil.
